So I was a little over zealous regarding our "balmy weather" but we have continued eating salads despite the howling wind and near permanent rain. Now I usually think of Steve as my little sous chef but this is actually one of his recipes and very yummy it is too.
- 1 small onion
- 1 green chilli
- 1 small bunch of coriander (cilantro)
- 3 tomatoes
- 6 spring onions
- 2 ripe avocados
- 1 lime
- salt and pepper
- Finely chop the small onion, green chilli and coriander and place in a mixing bowl.
- Coarsely chop the tomatoes, spring onions and avocados and add to the bowl.
- Add the juice of the lime and salt and pepper to taste.
- Mix gently and serve.
