Guacamole salad

So I was a little over zealous regarding our "balmy weather" but we have continued eating salads despite the howling wind and near permanent rain. Now I usually think of Steve as my little sous chef but this is actually one of his recipes and very yummy it is too.

Serves 2-3

  • 1 small onion
  • 1 green chilli
  • 1 small bunch of coriander (cilantro)
  • 3 tomatoes
  • 6 spring onions
  • 2 ripe avocados
  • 1 lime
  • salt and pepper

  1. Finely chop the small onion, green chilli and coriander and place in a mixing bowl.
  2. Coarsely chop the tomatoes, spring onions and avocados and add to the bowl.
  3. Add the juice of the lime and salt and pepper to taste.
  4. Mix gently and serve.
